Carrots Are Having a Moment 🥕

This month, we’re putting one of the most underrated vegetables in the spotlight — carrots! They’re sweet, versatile, and work just as beautifully in savory dinners as they do in breakfast and dessert recipes.

Here are some of my favorite ways to cook with carrots right now:

🥕 Roasted Carrot Navy Bean Hummus
This is your “wait, carrots can do that?” recipe. Sweet roasted carrots blend into a creamy, savory hummus that’s perfect for dipping, spreading, or snacking.

🥣 Curry Carrot Lentil Soup
Warm, cozy, and full of bold flavor. This soup is perfect for chilly March nights when you want something comforting but still simple to make.

🥞 Carrot Cake Pancakes
Fluffy, warmly spiced pancakes that taste like carrot cake — but totally acceptable for breakfast.

🧁 Vegan Carrot Cake
A classic for a reason. Moist, perfectly spiced, and topped with creamy frosting, this one never goes out of style.
