My Kids Are Growing Up and These Recipes Are Growing With Us

Back to school looks a little different in our house this year.

My son is heading off to college — I'm not crying, you're crying — and my girls are starting high school. They've informed me, very confidently, that they will be making their own lunches most days. (Their high school has plenty of options in the cafeteria, but they've decided homemade is the way to go. I love that for them.)

So while I'm not packing little lunchboxes with cute notes anymore, I am making sure we have easy, delicious, plant-based options that the girls can throw together themselves on a busy school morning — and that I can make for quick weeknight dinners when life gets hectic again.

These are the recipes we keep coming back to:

🥪 Veggie Hummus Sandwich​

This is THE most requested lunch in our house — and honestly, it's so easy the girls make it themselves. Prep the veggies ahead of time and it comes together in about 2 minutes.

🌱 Veggie Tortilla Rollups​

Bite-size, easy to grab, and no cooking required. Perfect for teens making their own lunch before school.

🌯 Southwest Roll Ups​

A little more filling than the classic rollup — packed with veggies and plant-based protein. Great for teenagers who need something that will actually keep them full through the afternoon.

🍝 Easy Hummus Pasta​

Make a big batch for dinner and pack the leftovers for lunch the next day. It's delicious hot or cold, and with 6,300+ shares it's one of the most loved recipes on the blog for good reason.

🥕 Carrot Cake Baked Oats​

For the mornings when everyone needs to be out the door fast. Make a batch the night before and breakfast is done before the alarm goes off.
