🍂 Summer's not gone yet, but fall is calling — these salads answer both



Hi, Reader,

Can you feel it? That little hint of something in the air?

The days are still warm, but there's a subtle shift happening — a crispness in the morning, a golden tint to the light, and suddenly all I want to do is reach for apples and butternut squash instead of corn and zucchini.

We're in that sweet spot between summer and fall, and honestly? It's one of my favorite times of year to eat.

These five salads were made for exactly this moment. Some are light and fresh to hold onto those last summery vibes. Others are hearty and cozy to welcome the season ahead. All of them are delicious — and proof that salad is never just a side dish.

🍎 Butter Lettuce Salad with Apples and Fresh Herbs

Delicate, fresh, and just a little bit fancy. This is the perfect bridge between seasons — still light enough for warm days, but with that first hint of fall from the crisp apple slices. A total crowd pleaser.

🥬 Kale Apple Salad with Warm Pumpkin Vinaigrette

This is the salad that officially kicks off the cozy season. That warm pumpkin vinaigrette drizzled over hearty kale, crunchy pecans, tart apples, and dried cranberries? I could eat it every single day from now until Thanksgiving.

🥗 Butternut Squash Quinoa Salad

Spinach, apples, roasted butternut squash, and a Dijon vinaigrette — this one is fall in a bowl. It's hearty enough for dinner and pretty enough for entertaining. Bonus: readers have been making this one for years and it never gets old.

🥦 Brussels Sprouts Salad with Broccoli and Tahini Dressing

Don't sleep on Brussels sprouts in a salad! Raw, thinly shaved, and tossed with broccoli and a creamy tahini dressing, this one is packed with flavor, texture, and all the good stuff your body is craving as the weather turns.

🥔 Arugula Salad with Herb Roasted Potatoes

Simple ingredients, big flavor. Warm herb-roasted potatoes tossed with peppery arugula and a squeeze of fresh lemon — earthy, herby, and so satisfying. This one works beautifully as a side or a light dinner all on its own.
