Mix, Match, Eat, Repeat 🍽️



Hi, Reader,

Lately, dinner has felt less like a planned event and more like a flexible moment in the day.

With the kids getting older and everyone on different schedules this summer, I've been leaning on meal prep components that are simple, familiar, and easy to pull together without a lot of thinking.

Instead of making a completely different recipe every night, I've been keeping a few staples in the fridge and turning them into different meals throughout the week. It's less stressful, less wasteful, and honestly just works better for this season of life.

Here are a few recipes I've been making on repeat:

🥄 Spicy Seasoned Black Beans
Perfect for tacos, burritos, taco salads, rice bowls, or quesadillas.

🌽 3 Bean Corn Salsa
This one is so versatile! We love it on tacos, over baked potatoes, scooped with tortilla chips, or piled onto salads.

🍚 Coconut Jasmine Rice
A simple side dish that turns into the base for quick bowls and stir fries all week long.

🥡 Marinated Baked Tofu
Great warm or cold and easy to add to rice bowls, wraps, salads, or noodles.

🥦 Easy Green Bean Broccoli Stir Fry
A quick veggie side that pairs with just about everything.

🍽️ BBQ Lentils
One of my favorite meal-prep recipes. They're delicious over rice with roasted vegetables or spooned over baked sweet potatoes for an easy dinner.

Here are some of the combinations we've been loving lately:

🌮 Taco Night
Spicy Seasoned Black Beans + 3 Bean Corn Salsa + tortillas

🥗 Taco Salad
Black Beans + Corn Salsa + chopped romaine + Southwest Ranch Dressing

🥡 Stir Fry Bowls
Marinated Baked Tofu + Coconut Jasmine Rice + Green Bean Broccoli Stir Fry

🍠 Stuffed Sweet Potatoes
BBQ Lentils + 3 Bean Corn Salsa + baked sweet potatoes

🍜 Easy Peanut Noodles
Marinated Baked Tofu + Green Bean Broccoli Stir Fry + rice noodles + peanut sauce

Nothing fancy. Just a handful of recipes that can be mixed and matched depending on who's eating and when.

I'm finding that dinner doesn't always have to be one big event anymore. Sometimes it just needs to be flexible.
