Mix, Match, Eat, Repeat ๐Ÿฝ๏ธ

Hi, Reader,

Lately, dinner has felt less like a planned event and more like a flexible moment in the day.

With the kids getting older and everyone on different schedules this summer, I've been leaning on meal prep components that are simple, familiar, and easy to pull together without a lot of thinking.

Instead of making a completely different recipe every night, I've been keeping a few staples in the fridge and turning them into different meals throughout the week. It's less stressful, less wasteful, and honestly just works better for this season of life.

Here are a few recipes I've been making on repeat:

๐Ÿฅ„ Spicy Seasoned Black Beansโ€‹
Perfect for tacos, burritos, taco salads, rice bowls, or quesadillas.

๐ŸŒฝ 3 Bean Corn Salsaโ€‹
This one is so versatile! We love it on tacos, over baked potatoes, scooped with tortilla chips, or piled onto salads.

๐Ÿš Coconut Jasmine Riceโ€‹
A simple side dish that turns into the base for quick bowls and stir fries all week long.

๐Ÿฅก Marinated Baked Tofuโ€‹
Great warm or cold and easy to add to rice bowls, wraps, salads, or noodles.

๐Ÿฅฆ Easy Green Bean Broccoli Stir Fryโ€‹
A quick veggie side that pairs with just about everything.

๐Ÿฝ๏ธ BBQ Lentilsโ€‹
One of my favorite meal-prep recipes. They're delicious over rice with roasted vegetables or spooned over baked sweet potatoes for an easy dinner.

Here are some of the combinations we've been loving lately:

๐ŸŒฎ Taco Nightโ€‹
Spicy Seasoned Black Beans + 3 Bean Corn Salsa + tortillas

๐Ÿฅ— Taco Saladโ€‹
Black Beans + Corn Salsa + chopped romaine + Southwest Ranch Dressingโ€‹

๐Ÿฅก Stir Fry Bowlsโ€‹
Marinated Baked Tofu + Coconut Jasmine Rice + Green Bean Broccoli Stir Fry

๐Ÿ  Stuffed Sweet Potatoesโ€‹
BBQ Lentils + 3 Bean Corn Salsa + baked sweet potatoes

๐Ÿœ Easy Peanut Noodlesโ€‹
Marinated Baked Tofu + Green Bean Broccoli Stir Fry + rice noodles + peanut sauceโ€‹

Nothing fancy. Just a handful of recipes that can be mixed and matched depending on who's eating and when.

I'm finding that dinner doesn't always have to be one big event anymore. Sometimes it just needs to be flexible.

I'd love to knowโ€”what recipes do you find yourself making over and over again?

Enjoy!

Photo collage of four dairy-free fall coffee drinks.

Hi, Reader, Fall coffee season is here and the Starbucks menu is calling. I hear you. Those drinks are delicious โ€” but $7 a pop adds up fast. And heads up if you're vegan: the Pumpkin Spice syrup contains dairy, meaning even an oat milk swap won't make it vegan. The good news? You can make these fall flavors at home in about 5 minutes โ€” completely dairy-free and incredibly delicious. Maybe even better. ๐Ÿ˜„ โ˜• Harvest Oat Pumpkin Latte This is the cozy fall latte you've been waiting for. Made...

Four photo collage of vegan fall harvest salads

Hi, Reader, Can you feel it? That little hint of something in the air? The days are still warm, but there's a subtle shift happening โ€” a crispness in the morning, a golden tint to the light, and suddenly all I want to do is reach for apples and butternut squash instead of corn and zucchini. We're in that sweet spot between summer and fall, and honestly? It's one of my favorite times of year to eat. These five salads were made for exactly this moment. Some are light and fresh to hold onto...

Collage of four 30 minute vegan dinner recipes.

Hi, Reader, We are officially in the thick of it. School is back in session this week, practices have started, and somehow I'm supposed to get dinner on the table between work, pickup, and whatever else life is throwing at me this week. Sound familiar? This is the time of year I lean HARD on my 30-minute recipes. No complicated techniques, no long ingredient lists, no standing over the stove for an hour. Just quick, simple, delicious meals that the whole family will actually eat. Here are...
