Bean salads are quick and easy to make, nutritious and filling, and budget friendly.

They make the perfect light lunch or dinner side dish. They're also great for taking on picnics or to potlucks and backyard BBQs.

Or if you're a baseball/softball parent like me - they travel easily to games for easy eating on the sidelines. Just don't forget to pack a fork!

They can usually be customized with whatever ingredients you have on hand and can easily be scaled up to feed a crowd.

Typically, bean salads will last for several days in the fridge without a deterioration of flavor or texture.
